The key is appropriate wage. As I previousy stated, for every head of lettuce
picked (BTW, it is picked by hand) the worker receives 0.3% of the resale worth
on that head. 

From what I have read, and again, the source may be mistaken, most pickers are
migrant workers that do go back to Mexico after the season is finished. They
all have work visas but I'm sure that's only possible if the farmers are
following the guidelings as set forth by Imigration. I'm sure some turn their
head and hire day workers to pad their pockets even more.
