If it helps, here's the reasons I don't do that:
1. My IIe with accelerator is faster
2. I like the RamWorks style extended memory
3. The IIgs doesn't output 'real' Apple II video (some people consider
this a feature)
4. I really like my Videx Ultraterm
Then there's the completely subjective "It just feels nicer" aspect.
