Depends on the software you use to write your mail.
If all your AKA's are listed in that software it SHOULD give you the chance 
to choose one of those AKA's before starting a message. The default address 
is always going to be used if you don't choose another one.
If you use GoldEd, then it's CTRL-A that will show the list of DEFINED 
addresses/AKA's.
