"normally" is the /operative/ word. FTP and SIP are two off the cuff
examples of protocols that /do/ care /greatly/.

There are a lot of ways that this can happen. Layer 2 messing with MAC
addresses and / or Layer 3 messing with IP addresses and / or Layer 4
messing with TCP (et al.) sockets and / or Layer 7 messing with
application layer data.
