Disney can't have it both ways. Either their films are, as you suggest,
only cartoons and should not be taken seriously, or they are significant
artistic enterprises and subject to criticism as such. If they're only
cartoons, they're making far too much fuss about them. If they're
significant artistic enterprises, then perhaps they should pay attention
to the critics and see if they can glean some information on how to
make future ones better.
Personally, I'd say the amount of care lavished on the making of a
typical Disney animated film suggests that it isn't just a cartoon.
