Yeah, there were backup copies of most all of what was in /boot, so I did
try mouting with the LIVE CD (from linuxcentral, the ubuntu packages comes
with both an install & a LIVE CD).  However, restoring the backup copies
didn't seem to make a difference.  It was like something was missing
entirely.
