Ask him if the default linux install is secure enough for the web and then
ask him (assuming he says no) what he would change in the default install
to make it more secure.

As him if php is secure if you allow other folks in the company to upload
php code to the web farm.

Make it sound like you think both are secure right out of the gate. If this
doesn't send him off into a rant about the sad state of security, find
someone else.
