Although I don't know what XMPP has to do with Linux by itself, but well...

Well, I found prosody quite easy to setup... what is a little bit challenging
are the XEPs you might want/need to install. When pushing things forward you'll
need TURN and SIP server as well.
I've ejabberd, OpenFire and now Prosody. I'm quite satisfied with Prosody so
far...
