Show him a company hierarchy chart and ask him what groups and permissions
he would set up. Ask about sudo and who gets which privileges.

Ask about backup strategies - long term, short term and how they differ.

Which kernel are you going to use; what are the reasons for updating, what
are the reasons for not updating.

Where do you store log files? (Clue: not on the machine that's running the
executable - but how about NFS locking/latency?)

Without knowing more about how your business uses Linux it's hard to give
specific advice, but any admin worth hiring should be able to talk your ear
off about all those things and more.
