Maybe look here for starters with NextCloud?
https://docs.nextcloudpi.com/en/welcome/

To learn the Pi try
https://www.raspberrypi.org/

and/or

https://learn.adafruit.com/
In the searchbox, type the thing you want to learn about, like "Linux"

It's hard to recommend books on Linux (or anything else) sight unseen.
Maybe go to a local bookstore and see what they have that suits you.
Ideally you'' find a book on the Raspberry Pi version of Linux...
Raspbian.
