Look at the pitch like gears on a car.  Lower pitch doesn't 'screw'
it's way through the air as much with each revolution, so it doesn't
load the engine as much.  Like low gear in a car, acceleration is
better, but speed tops out rapidly as the engine reaches and holds
it's peak RPM.
A higher pitch is like a higher gear.  Engine loading at low speeds
is greater, but since it takes a bigger 'bite' of the air, high
speed is enhanced.
