I don't think it would be hard to make a hologram that would focus images.
The problem would be to make it of high enough quality as to be worth
using. If you look at any hologram, they have a limit to their resolution
that I think would be unacceptable for astronomical uses.
You can focus parallel light by diffraction with a series of concentric rings.
If you make a hologram of a bright dot, that's what you get. But it won't
make a very high quality lens.
