Perspective.  But I suspect you already know that.  That scene on the
wall of Helm's deep, for instance; he probably played that on his
knees, or standing in a hole, so the top of his head was level with
the wall.  Being careful with whom he is mixed and matched is another
trick, I surmise; putting him next to the Hobbits during dialogue. 
Then there are camera angles.  Shoot the scene with one camera on a
boom to shoot down on Davies and another on a tripod for the other characters.
