For AppleWorks you have  couple choices.

A modern printer with serial/parallel as an option and since they all
emulate either Epson ESC or HPGL you can just use that, or something
that has AppleTalk (via network, obviously) and you boot into GS/OS
and then you can even boot P8 - but you download the ImageWriter
emulator to the Postscript printer - and you can even do Mousetext on
the laser output.
