Actually, she had all 7 novels plotted before she ever began work
on Book 1.  I think what Dumbledore is about to tell Harry is
what he refused to tell him at the end of Book 1, namely, why
Voldemort wanted to kill him in the first place. Which makes
sense; an 11-year-old might not be able to handle it, whereas a
16-year-old would be much more likely to be able to understand
such things. Especially after everything Harry has seen thus
far.  
I also think I might know why Voldemort wanted to kill Baby
Harry.  I'll be happy to tell anyone who asks.
