Thunderbird has a setting to periodcally Save what I am writing.
Probably Apache Open Office does that too if I ever used it.

Right now those are the only programs I can remember that I use that I
don't have to manually Save what I'm doing by pressing the CTRL S keys.

Or in the case of the editor I use in MultiMail, pressing Alt F S which
I hardly ever will do when writing messages in MM.
