Title: Leo's Buffalo Spaghetti

Yield: 9 Servings
1/2 lb Ground buffalo meat or lean
- ground beef
2 lg Onions; minced or chopped
2 cl Garlic; minced
1/4 ts Crushed red pepper flakes
3 c (to 4 c) mix of any of
- these; mushrooms, bell
- peppers, zucchini and/or
- carrots
28 oz Can diced tomatoes
14 oz Can tomato sauce
2 oz Tomato paste
1 ts Turkish oregano
1 tb California basil
1 ts Thyme
1/4 c Red wine; opt
1/4 c Capers; opt
1 ts Salt; to taste
In a large kettle, cook the onions over medium heat
until soft. They may stick a bit, don't worry. Add the
garlic and CRUSHED RED PEPPER FLAKES and stir. Add the
buffalo meat and cook until browned, then add the
vegetables and continue cooking about 10 more minutes.
Add the tomatoes, tomato sauce and tomato paste and
stir. Add the OREGANO, BASIL and THYME. Add wine if
using. Simmer for at least 20 minutes to reach the
desired consistency. Add the capers. Add salt to taste.
Serve over your favorite pasta.
Serves: 8-10
