Title: Fruit Compote w/Ginger

3 md Ripe yet firm fresh pears
15 1/2 oz Can pineapple chunks;
- undrained
1 c Dried apricots; quartered
3 tb Frozen orange juice
- concentrate
2 tb Packed brown sugar
1 tb Quick-cooking tapioca
1 ts Grated fresh ginger

1/2 ts Ground ginger
2 c Frozen unsweetened pitted
- dark sweet cherries
Flaked coconut; toasted
Macadamia nuts or pecans;
- chopped, toasted
If desired, peel pears. Cut pears into quarters and remove
cores. Cut pear quarters into chunks. In a 3 1/2 or
4 quart slow cooker combine pears, pineapple, apricots,
orange juice concentrate, brown sugar, tapioca, and
ginger.
Cover and cook on low-heat setting for 6 to 8 hours or on
high-heat setting for 3 to 4 hours. Stir in cherries.
