Title: Torta Ta San Martin

2 lg Eggs; separated
5 tb Caster sugar
5 tb Plain flour
2 tb Milk
200 g Pitted dates
100 g Chopped figs
200 g Shelled hazelnuts
200 g Shelled walnuts
75 g Sultanas
50 g Candied peel
1 Handful whole almonds to
- decorate
Heat the oven to 180ºC/360ºF/Gas 4.
Grease a 14cm square baking tin, sprinkle with flour and
shake off any excess.
With an electric whisk beat the egg-whites until they
are fluffy. Then add the yolks, sugar, flour and milk.
Combine them well and then fold in the dates, figs,
nuts, sultanas and candied peel. Pour the mixture into
the tin.
Bake for 30 minutes. Place the almonds on top, arranged
in a circle.
Don't let the cake cool in the oven. Bring it out, leave
it in the tin for 10 minutes until it has steamed off
and then turn it onto a wire rack to cool.
