Title: Crabmeat St. Martin

8 oz Crabmeat
1/4 c Butter
2 tb Onion; chopped
2 tb Celery; chopped
2 tb Green onion; chopped
2 cl Garlic; minced
1 tb Flour
1 1/2 c Heavy whipping cream;
- heated
1 tb White wine
1/2 tb Lemon juice
ds Tabasco sauce
Salt & cayenne pepper
2 tb Parmesan cheese
2 tb Red pepper; diced
2 tb Parsley; chopped
In a saucepan, melt the butter on low heat. Saute the
onions, celery, green onions and garlic until soft but
not browned. Mix in the flour. Whisk in the hot cream
until slightly thickened.
Add the crabmeat, red pepper and parsley. Stir until
well blended. Spoon into ramekins. Serve with crackers.
