Title: Greek Chicken & Pita Casserole

4 c Chopped cooked chicken
3 md Zucchini; halved lengthwise,
- in 1/2" pieces
10 3/4 oz Can cream of chicken soup
1 md Red onion; chopped
1/2 c Chicken broth
1 1/2 ts Greek seasoning
2 cl Garlic; minced
2 (6") pita bread rounds; in
- bite-size wedges
Cooking spray
3 md Roma tomatoes; chopped
1 c Crumbled feta cheese
1/2 c Pitted kalamata olives;
- sliced
Set oven @ 350ºF/175ºC.
In a large bowl, combine chicken, zucchini, soup, onion,
broth, 1 teaspoon of the Greek seasoning, and the garlic.
Transfer mixture to an ungreased 3-quart rectangular
baking dish.
Coat pita wedges with cooking spray; sprinkle with the
remaining 1/2 teaspoon Greek seasoning. Sprinkle pita
wedges, tomatoes, cheese, and olives on top of chicken
mixture. Bake, uncovered, about 20 minutes or until heated
through.
Makes 4 servings.
