Title: Pork Goulash

Yield: 6 Servings
1 3/4 lb Boneless pork loin roast;
- trimmed, in 1/2" pieces
3 md Parsnips; peeled, in 1/2"
- coins
2 lg Carrots; peeled, in 1/2"
- coins
1 lg Onion; chopped
4 tb Sweet paprika
2 c Chicken broth
1/2 lb Green beans; trimmed, in 1"
- pieces
1/2 c Dairy sour cream
2 tb Cornstarch
1/2 ts (ea) salt & black pepper
Place pork, parsnips, carrots and onion in slow cooker.
Sprinkle with 2 tablespoons of the paprika; stir to coat.
Pour in broth. Cover and cook on HIGH for 3 hours or LOW
for 4-1/2 hours.
Add green beans; cook 30 minutes.
In a small bowl, blend remaining 2 tablespoons paprika,
sour cream, cornstarch, salt and pepper. Stir into slow
cooker bowl until thickened.
