Title: Latin-Style Pork

Yield: 8 Servings
3 lb Boneless pork roast;
- trimmed; halved lengthwise
2 lg Yellow peppers; seeded,
- sliced
1 md Onion; thin sliced
14 1/2 oz Can diced tomatoes
1 tb Capers; drained
1 tb Ground cumin
1/2 ts Cinnamon
3 cl Garlic; sliced
1 tb Sliced pickled jalapenos
1/2 ts Salt
4 c Cooked white rice
Place pork in slow cooker bowl with peppers, onion,
tomatoes, capers, cumin, cinnamon, garlic and jalapenos;
stir to combine. Cover and cook on HIGH for 3 hours or LOW
for 6 hours.
Remove pork from slow cooker. When cool enough to handle,
shred pork into bite-size pieces; discard any excess fat.
Combine pork with tomato mixture in slow cooker bowl; stir
in salt. Serve with rice.
