Title: Squid Leander

1 1/2 lb Squid
2 tb Cooking oil
2 sl Bacon; chopped
1/4 ts Lemon juice
2 Spring onions; chopped
1/2 c Small shrimp; peeled,
- deveined, drained

2 tb Butter
2 tb Flour
1 c Milk
Salt
Prepare squid, then score the outside of the hood
lightly, cutting lengthwise only, with a sharp knife.
Cut it into strips 1" x 1/4", and thin slice tentacles.
MAKE WHITE SAUCE. To make the roux melt butter in a
pan and add flour stirring constantly over medium heat
until the raw flour taste is gone. Add the milk to make
it a sauce and salt to taste.
When cooked, add drained shrimp. Keep warm with lid on
saucepan. Heat a film of oil in pan, add bacon and cook
slightly, add remaining oil and heat, then add squid and
lemon juice. Stir fry 1 minute, sprinkle on spring
onion. Lift from pan using a perforated spoon or fish
slice, drain on absorbent paper, then add to sauce.
Serve garnished with crisp fried noodles.
Serves 4 as an entree or 8 as an appetiser
