Title: Thai Shrimp & Noodles

Yield: 6 Servings
8 oz Spaghetti, broken
1 1/2 lb Broccoli florets
1 lb Shrimp in shells, peeled,
- deveined, tails on
1/3 c Creamy peanut butter
1/3 c Soy sauce
3 tb Rice vinegar
2 tb Toasted sesame oil
1 tb Chile oil

1 tb Cooking oil

ds Bottled hot pepper sauce
1 tb Grated ginger
3 cl Garlic; minced
4 Green onions; chopped
1/3 c Chopped cashews or almonds
In a 4 quart Dutch oven or large pot bring a large amount
of water to boiling. Add pasta; cook 4 minutes. Add
broccoli; cook 2 minutes. Add shrimp; cook 2 to 3 minutes
or until pink. Meanwhile, in a bowl combine peanut butter
and soy sauce. Stir in vinegar, sesame oil, chili oil,
ginger root, and garlic. Drain spaghetti mixture; return
to pan. Add peanut butter mixture, green onions, and nuts.
Toss gently to coat.
Makes 6 servings.
