Title: Hathu (Curried Mushrooms

Yield: 2 servings
100 g Mushrooms
1 Green pepper
1 Onion
1/2 ts Salt
1 ts Garam masala
1/4 ts Turmeric
1/4 ts Chilli powder
50 ml Oil
Slice the mushrooms, pepper and onion. Place in a bowl, add the salt,
garam masala, turmeric and chilli powder and mix well. Heat the oil
and stir fry the mushroom mixture for 10 minutes.
Note - If this curry appears too dry add 60 ml thick coconut milk just
prior to serving.

Title: Kadju (Curried Cashew Nuts)

Yield: 4 servings
225 g Cashew nuts
50 g Onion
1 Fresh chilli
1 ts Curry powder
1/4 ts Garam masala
1/2 ts Turmeric
250 ml Coconut milk
1/4 ts Chilli powder
1 ts Salt
1/2 ts Fenugreek
1 Sprig curry leaves
25 ml Oil
fWash the cashew nuts, then soak them in a bowl of water for a couple
of hours. Chop the onion and chilli. Remove the cashew nuts from the
water, drain and place in a saucepan together with the chilli, curry
powder, the turmeric, coconut milk, chilli powder, salt, fenugreek
and curry leaves. Bring to the boil and simmer for 5 minutes. Heat
the oil in a frying pan and toss in the onion for a couple of
minutes. Add the cashew nut mixture and cook for a further 3-4
minutes then sprinkle with garam masala.
