Hospitals can, and do, precisely this.  My ex-wife, while we were
still married, ran up several thousand worth of non-covered
medical expenses.  It took me just over three years to repay the
debt.  This was paid directly to the hospital, I refused to take
out a loan and have to pay interest in addition to the debt.
