But why would I need multiple ethernet adapters?

If the setup is like this:

Mobile wifi internet hotspot (phone or what ever)
   |
connecting to rpi via wifi
   |
rpi connected to ethenet switch via cable
   |
other devices are connected to this switch

I see only one ethernet from rpi or I'm I missing something here?

There might be other devices that can connect directly to the wifi but
that's nothing to do with rpi though, since it's job is only direct
trafic from lan to the wifi hotspot, right?
