I'm curious, what is it that a media server does that just putting the
mp3's on a website with links won't do (if you click on an MP3 it will play
while it downloads)? I mean it's trivial to rip a stream to disk so that's
sort of a pointless reason?

Are you looking for some specific functionality or copy protection?
