We have 2 labs that were under wired when our building was remodled
(3 jacks in one and 6 in the other) and we need 30+ workstations
in each.  Rather than extending the backbone with huge loops I just
ran a HUB to HUB UTP line and added a HUB to each lab.  A lot easier
than running 20-30 UTP lines _but_ not ideal for a new installation.
UTP sounds fine for your situation going only up one floor.  HP manuals
have good diagrams for HUB to HUB wireing.
