In case some fool takes them to court because "their program
destroyed my monitor". With the warning, fools won't bother, 'cause
they were warned.
Why do you think manufacturer's put "No user-servicable parts
inside"? Do you think they _care_ if you open the thing up to fix it
yourself? Guess what: they don't. What they _do_ care about is a
lawsuit if you should happen to injure yourself while fooling around
inside the equipment. With the "warning" they escape liability -
'cause they _told_ you there was nothing in there to interest you.
However - believe what you like. If you chose to believe that
monitor manufacturers take no precautions to protect their equipment
from out-of-range signals, knowing full well that commonly available
adapters can generate signals inappropriate for some monitors, then
fine by me. Fuses, however, are cheap.
