Slowly, much slower that have become accustom to.

I thing they would get replaced more often that need would dictate.
Perfectly serviceable ships would fall to second rate lines any time a
major advance in speed was made. The First rate lines would replace ships
any time a significant increase in speed was made. Ships would be upgraded
to reflect changes in luxury standards.
I also see a difference in passenger carrying lines between cruise and
passage. Passage means getting there, quicker the better. Cruise means
being there, the more luxurious the better. You could have things line the
"Jovian Saturn Cruise Line." The ships are monster luxury
resorts that don't even have warp drives. They specialize in seeing that
passengers get wonderful views of the gas giant planets in the very best of
living. They overnight at the Ganymeyne Station Casinos, something they
invented. The space equivalent of a Caribbean cruise. Going nowhere in
great luxury.
Passage liners would run from the Spartan and not to fast for the down and
out to the top of the line warp 9.9 cruise luxury ships you barely have
time to enjoy. The propose of the passage liner is to get you to your
destination in comfort and speed, mainly speed. These sleek numbers work
only in the settled areas. You don't find them on the frontier.
Out in the beyond, you get the old Starfleet cruiser. A demilled Excelsior
or Maranda class tough as rusty iron, rearmed to the teeth and broadcasting
"don't mess with me" to any and all that encounter her. This is
the frontier liner. She isn't the fastest, but she is just that much
better than what pirates can afford, so she is left alone.
