Quoting Andrew Thrift to All re "Sulphate/Sulphite"
AT> Hi Guys, I have a question about a chemichal I came accross in a
AT> Kodak book about developers, it listed a chemichal called Sodium
AT> Bisulphite which I have never heard of, I was wondering is this the
AT> same as Sodium Bisulphate? Thanks for your help.
No, bisulphite is a reducing agent or anti-oxidant which means that if it
does undergo a reaction it becomes itself oxidised to bisulphate.
Sodium Bisulphite is commonly used as the antioxidant in meats (keeps it red
instead of grey) and in wines (to minimise conversion of alcohol to vinegar)
and reacts to Sodium Bisulphate in carrying out this function.
