Ok, I kinda figured that out at least the challenge bit.  I note that at the
start of the show they introduce maybe 6 or so Iron Chefs. Flay is one, then a
Japanese fellow is another and they even have a gal chef?

The few times I've watched it, Flay was picked to challenge.

Interesting.  I wasn't aware it had Japanese roots.
