If the virus just wants to destroy the FAT, encryption ot it is
not very useful since of course the same thing can be achieved by
just overwrite the FAT with random data.
However, there are viruses which encrypts the FAT. One example is
the Casino virus which encrypts the FAT and then lets you try to
win back your FAT by playing a slot machine. If you win the FAT is
restored. If you lose your FAT is lost forever.
At least that virus programmer had at least some humor. ;-)
