I figured someone with more knowledge about your questions would jump in. 
I'll answer what I can.

The kernel doesn't have anything to do with the font support. The higher
layers handle the font support. PostScript is well supported and from what
I can tell most printer support is done by sending things to a postscript
interpreter and then converting to something else for a particular printer
if needed.

No. The GUI makes a difference in whether anti-aliasing to the screeen is
supported. Printing is handled below the GUI layer and works just as well
even with no GUI running.
