Title: Blue Corn Blueberry Belgian Waffles

Yield: 4 servings
2 Eggs beaten
3/4 c Plain yogurt
3/4 c Milk
1/3 c Cooking oil
2 ts Vanilla
1 1/2 c Blue corn pancake and waffle
Mix
1/2 c Blueberry complete pancake
Mix
1/4 c Pine nuts
8 Apples peeled and cut into
1/2 Inch wedges
Sauteed Apple Rum Raisin
Sauce
In a large bowl combine eggs yogurt, milk, oil, and vanilla. Beat
with wire whisk until smooth. Add pancake mixes beating just until
combined. Fold in pine nuts. Let stand 5 minutes. Do not stir. Bake
in Belgian wafflemaker according to manufacturer's directions. To
serve place waffles on plates. Arrange apple wedges on top and
drizzle with sauteed apple rum raisin sauce. Dollop with dairy sour
cream or plain yogurt sprinkle with fresh blueberries if desired.
Makes eight 6 inch waffles. If you cannot locate blue corn pancake
mix increase the blueberry mix to 1 1/2 cups and add 1/2 cup of blue
cornmeal.
