Title: Breakfast Chicken Enchiladas

Yield: 4 servings
1 1/2 c Dairy sour cream
1 10 3/4 oz can condensed
Cream of chicken soup
1/4 c Milk
1 c Shredded cheddar cheese
1 c Shredded montery jack
Cheese
3 c Diced cooked chicken
12 6 or 7 inch tortillas
Green chili sauce
6 Fried or poached eggs
Raspberry Mango Red chili
Sauce
Fresh cilantro
In a large bowl combine the sour cream, condensed cream of chicken
soup and milk. Stir in cheddar and Montery jack cheeses. Spread half
the sauce mixture in the bottom of a 3 quart baking dish. Set aside.
Stir the cooked chicken into remaining sauce. Spoon chicken mixture
down the centre of each tortilla. Spoon green chili sauce on top of
the chicken filling. Roll up the tortilla and place seam down and put
on the sauce in the baking dish. Cover baking dish with aluminum
foil. Bake at 350 for 30 minutes until enchiladas are heated
through. To serve enchiladas place the enchiladas on to the serving
plates and top each serving with fried or poached eggs. Garnish
enchiladas with Raspberry Mango red chili sauce and fresh cilantro.
