Title: Tequila Sunrise Bread Pudding

Yield: 4 servings
6 c Bite size pieces of white
Bread
Or french bread
1 c Milk
3 Eggs beaten
1 8 oz can crushed pineapple
In juice
1/2 c Granulated sugar
1/2 c Packed brown sugar
1/2 c Melted butter
1 tb Lemon juice
1 tb Vanilla
1/2 c Golden raisins
1/4 c Pine nuts
MARGARITA SAUCE
1 c Sugar
2 Egg yolks
1/4 c Melted butter
3 To 4 tb white tequila
2 tb Water
1 tb Lime juice
In large bowl soak bread pieces in milk. Stir in eggs, undrained
pineapple, sugars, melted butter, lemon juice, vanilla, raisins, and
pine nuts. Divide among 8 souffle dishes. Place souffle dishes in
baking pan and bake at 350 for 15 to 20 minutes or until knife
inserted off centre comes out clean. Cool slightly Top with Margarita
Sauce Margarita Sauce In a sauce pan whisk sugar, egg yolks until
well mixed. Stir in melted butter. Heat and stir over medium-low heat
just until bubbly. Remove from heat stir in tequila and water and
lime juice. Serve warm. Makes about 1 cup.
