Title: Plum Flan With Walnut Quiche Crust

Yield: 4 servings
1 1/2 c All Purpose Flour
4 ts Granulated Sugar
1/4 ts Salt
1/4 ts Baking Powder
6 tb Butter
1/3 c Ground Walnuts
1 1/2 lb Slightly firm plums
1/2 c Granulated Sugar
1/4 c Packed brown sugar
3/4 ts Ground cinnamon
3 Egg yolks
1 1/4 c Dairy sour cream
In a large bowl stir together flour the 4 ts granulated sugar, salt
and baking powder. Cut in the butter until the mixture resembles
fine crumbs. Stir in the ground walnuts. Press the mixture into the
bottom and up the siders of a 10 inch quiche dish. Quarter the plums
and remove the pits. Arrange the plum pieces in spoke fashion in the
prepared crust. Combine the 1/2 cup of granulated sugar, brown sugar,
and cinnamon and sprinkle on top of the plums. Bake uncovered in a
400 oven for about 15 minutes. Combine the egg yolks and sour cream
and pour on top of the plums. Return quiche dish to oven and bake 25
to 30 minutes more or until set. Cool on wire rack at least 20
minutes to set up. Makes 8 servings. Note If desired divide the
crust mixture, plum pieces and sugar mixture between two 7 to 8 inch
quiche dishes. Bake in at 400 for 15 minutes. Divide sour cream
mixture between the two dishes. Bake 15 to 20 minutes more or until
set. Variation Subsitute peaches or cherries or apricots for plums in
this creamy dish or combine yellow plums and apricots for a mix of
flavours. Pine nuts can also be subsituted for walnuts.
