Brownies Negro Java Jive Dense, CHOCOLATELY, and RICHER 'n a corrupt CEO.... [Note: I did a double decker for Reid, which was definitely overkill, but if you want a layer brownie cake, double the recipes] For the Brownies 8 tablespoons (1 stick or 1/2 cup) margarine 3/4 cup (12 tablespoons) cocoa powder 3 tablespoons oil (I used olive, 'cause that's what's on the counter) 1 tablespoon vanilla extract 3 tablespoons strong coffee 2 eggs 1 1/4 cups sugar 1/4 teaspoon salt 1/2 cup flour 1 cup Giradelli double chocolate chips Preheat oven to 350F. Grease & flour* an 8-inch round cake pan. *use cocoa powder instead of flour for a really dark brownie. Melt the margarine (I zap it in the microwave) Add cocoa powder & oil, stir until smooth & glossy. Add the vanilla, coffee, eggs, sugar, and salt to the chocolate mixture and mix until thoroughly combined (batter will be quite stiff) Add flour and mix well. Stir in chocolate chips. Spread batter evenly in prepared pan. Bake for about 45 minutes -- until the top is dry and a toothpick (or knife) inserted in the center comes out barely clean. Remove from oven and let cool. Remove from pan and place on cake plate. For the Frosting: 6 tbsp butter or margarine 2 cups powdered sugar (at least) 1 tablespoon strong coffee 2 tablespoons butterscotch or caramel sundae sauce 1/4 cup Heath Bar Bites (tm) -- or toffee chips of your choice. Optional: butterscotch/caramel and chocolate sundae sauce for garnish In food processor, process Heath Bar Bites until desired "chunk" Add butter, sugar, coffee, butterscotch sauce. Process until smooth. If icing isn't thick enough, add more powdered sugar 1/4 cup at a time; if too thick, add more coffee, a scant 1/2 teaspoon at a time. Frost brownie cake. Optional: Finish by dribbling a spiral of chocolate sauce over the top; then spiral butterscotch sauce next to the chocolate . Starting at the center and working outward, drag a toothpick or fork through the spiral for a tie-dye effect. Serve VERY small slices.
