The only thing you _need_ on the SD card is a VFAT partition that can be
mounted at /boot - with all the files in the partition obviously. (2Gb
is well enough.)

At the very least put /var and /home on the SSD/HDD and make /tmp a
tmpfs mount.

A second hand M2 SSD can be got for <£20, and a USB housing for <£10.

It all works well here.
