since recipes appear to be popping up... I figured I'd post this one. Made it a few days ago and it was *wonderful* Came out of a cookbook (in itself wonderful.. full of interesting cultural bits, tips, hints etc, not to mention lovely photography) by Martin Yan (of Yan Can Cook fame) called Culinary Journey Through China I've made several things from this, and the only thing stopping me from trying more is that many of the recipes call for ingredients not conveniently found at the local grocery store. (Though with the large Asian population here I'm sure I can find an Asian grocery store... and I *know* Laurie can Hongcouver being what it is :) (if Laurie were inclined to eat noodles that is, though one could always leave them out) Anyway -- Beijing Noodle Soup 4 dried black mushrooms 1/4 pound medium raw shrimp, shelled and deveined Marinade: 1 tablespoon soy sauce 1 teaspoon rice wine or dry sherry (I used sherry since I usually have it on hand for cooking) 1 teaspoon cornstarch 1 package (12oz) Chinese egg noodles 5 cups chicken broth (if I don't have any to hand, I usually have Swanson's chicken broth in the aseptic packaging.. the carton. It's *excellent* and with no "can" taste) 20z tender, boneless beef or chicken or pork thinly sliced (I used chicken) 1/4 pound cabbage sliced 2 tablespoons oyster flavored sauce 1 teaspoon chili garlic sauce 1 teaspoon sesame oil 1) soak mushrooms in warm water (just covered) until softened - about 15 min. Drain, trim and discard stems. Thinly slice caps. Cut shrimp in half horizontally. Combine marinade ingredients in a bowl. Add shrimp and stir to coat. Let stand for 10 minutes. 2) Cook noodles in a pot of boiling water according to package directions. Drain, rinse with cold water, and drain again 3) place brother in a 2-quart pot, bring to a boil. Add meat, mushrooms and cabbage. Reduce heat to low, cover and simmer for 3 minutes. Add shrimp and simmer for 1 minute. Add noodles, oyster sauce, chili garlic sauce, and sesame oil; cook until heated through.
