A tip is generaly given without claim or demand. I usually tip 10-15%.

The 18% you were talking about sounded like a demand. That's a non starter, I
would find somewhere else to eat.

I think that servers should be paid a descent wage to begin with but that isn't
always the case.

I was a dishwasher at one time and was given about $15 a week in tips from the
pot, apparently. I didn't work there very long.
