Cateye, Vetta and Avocet all make decent speedometers. The Cateye Astrale
and Vetta C-20 are the only 2 available according to some info I have from
Performance Bicycle Magazine that have Cadence as well as speed and
trip/distances. They also included stop watches, time of day, average speed,
max speed, and are $40.  *I* have the Cateye Astrale and am very pleased
with it - not 1 problem for me and it has well over 3000 miles on it so far.
As for seats, I believe you mentioned you were an older rider, compared to
me being 22.  I would only naturally assume that you would want the most
comfortable fit possible, and each rough ride on your butt would ache alot
longer then someone younger.  You could wait to get used to the stock seat,
but being it's harshness is so noticeable right from the start, it might be
wise to spend the $$ and make your riding much more pleasureable and
enjoyable all around. Terry and Vetta make aftermarket seats, and I've heard
many positive reviews of the Terry seats, with gel. Check them out at your
local bike store and see what he suggests.  Being your not racing and
carrying around an extra pound or 2 won't hurt, I'd go for the more
comfortable, wider, pressure relieving seat.
