It depends on the way you are looking at the connector ... but 
looking from the flat side (easier to see the wires) thats right.
I believe you just swap the pair wires (I only do this a couple 
times a year and have to look it up), not the adjoining pairs.
Kind of like a serial cable where Trans/Recv have to be swapped.

With Cat5, the twists are supposed to continue as close to your
connectors (any connector) as possible.  With Cat3 its not critical.

I wouldn't worry about shielded until you try UTP.  You should be 
able to buy pre-made cables for $5-10 or make your own.
