I have since upgraded to KDE instead. I think in Gnome you might find the
setting for htmlview here:

System" > "Preferences" > "More Preferences"
> "Preferred Applications"

But I haven't yet found the KDE equivalent place.

It must ultimately reside in a config file somewhere.
