High Nitrite levels are not uncommon for the first few months.
Keep changing the charcoal every 3-4 weeks and do not add any
more fish.
Live plants can help, especially if you don't have an undergravel
filter.  The root systems will put to use all those things which
settle to the bottom of the tank.  Just make sure there is extra
aeration because the plants will put out oxygen by day and carbon
dioxide at night and the extra aeration will help break down the
CO2.  Also for plants, if you choose to put them in, you might
want to look into a natural spectrum/grow light for the aquarium.
Test the water weekly, do water exchanges regularly and if the
nitrites don't get under control in about another 6 weeks, go to
the local library and check out all the books you can find.
But I wouldn't buy any more fish.  If all the fish die, break
down the tank and when you set it up again start out with only
2-4 fish for the first 3 months. OH!  and test the water that you
are putting into the tank...never know what is in some water...
