Because it's not drivers that are responsible for the emulation and and the
devices are not any kind of plug-in, they are integral to the emulation.
Part of the reason the VM products emulate such simple (read old) devices
is that it is most certainly not trivial to emulate anything better, not to
mention the performance just wouldn't be there to be even acceptable.
VMWare is just starting to do some 3D video emulation and I wouldn't
exactly call that near what's needed for some for some hypothetical secure
path emulation.
