 First, be sure you have isolation between the
audio outputs that you plan to use and the AC
mains!! An isolation transformer or an audio
transformer could be used if needed.

 The conventional way to change the level is to
use a "higher than normal impedance" load and a
coupling capacitor.

 100 ê is a common load and 220 ufd is a common
capacitor value. The positive of the capacitor
is connected to the load side (or, better yet,
use a non-polar capacitor).

 I don't recommend keeping the speakers
connected at the same time. A switch could be
used to select internal speakers or an external
amplifier.

 You could add a potentiometer after the
capacitor to vary level. I wouldn't worry about
the taper unless you plan to use it as a volume
control, rather than a set and forget matching
device.

 I don't have a recommendation on which IC to
use.
